Not so slow the snails to come here!
It is Lisa Lamontre (Mazangé farm) who supplies us the local snails, raised with love!
In May after the last frost, 150 000 œufs de ” big grey ” arrive at the farm (from the Drôme). They go to the four parks for outdoor breeding where they live in complete peace!
No salad on the menu as in a domestic breeding, they are fed every evening by cereal, calcium (for the shells), micronutriments and minerals, the whole concocted by a mill specialized in the animal organic food.
In autumn snails reach their grown-up size (between 15 and 20g) 400 – 500 times their born weight! The season is then for the collect. Then Lisa makes them fast 5 days minimum, the objective is that they put themselves in hibernation and that they are profoundly put to sleep before putting them in boiling water.We then obtain meat ready to be cooked.
At la Tonnellerie we serve them the old way! In stove with the traditional garlic&parsley butter, homemade of course!
